MANGO PIYUSH

Time : 2-1/4 hours
Serves : 4 people

 

Ingredients :
Aamrakhand (Mango shrikhand) – 2 cups
Powdered Sugar – 2 tbsp
Cardamom powder – 1/2 tsp
Saffron (soaked in 1 tbsp milk) – 5-6 strands
Fresh thick buttermilk – 3 cup
Finely chopped mango pieces – 1 cup
Milk – 1/2 cup
Grated pistachios and almonds – 2 tbsp

 

Method :
1. Take a big bowl, put aamrakhand, buttermilk and milk. Whisk together with a blender so that no lumps are left.
2. Add saffron milk, cardamom powder, mango pieces and powdered sugar. Mix it well.
3. Refrigerate for 2 hours.

 

Serving :
Serve chilled mango piyush in a glass. Garnish with grated pistachios and almonds.

MANGO PIYUSH

MUSKMELON AND ROSE SMOOTHIE

MUSKMELON AND ROSE SMOOTHIE

Serves : 3 people
Time : 15 minutes

Ingredients :

Chopped muskmelon – 1-1/2 cups
Clear Rose syrup  – 1/2 cup
Milk – 2 cups
Dried rose petals – 3/4 tsp
Vanilla ice cream – 1 scoop
Fresh curd – 1/2 cup
Sugar as and if required
Ice cubes – 4 pieces

Method :
1. Mix muskmelon, rose syrup, milk, vanilla ice cream, fresh curd, ice cubes and sugar and blend well in a juicer.

Serving :
Pour smoothie in a glass, garnish with rose petals and serve fresh.

JAMUN ICE TEA

Time : 1-1/2 hours
Serves : 2 people

Ingredients :

Water – 2-3/4 cups
Jamun pulp – 1/2 cup (blended jamun in a mixer after removing seeds)
Tea leaves – 2 tsp
Sugar – 3 tbsp
Ice cubes as required
Mint leaves – 4-6 units
Lemon juice as required


Method :

1. Pour water in a deep pan and add tea leaves.
2. Add sugar and boil till it simmers.
3. Pour jamun pulp in a bowl and strain the boiled tea in that bowl with the help of a strainer. Mix it well.
4. Keep it aside and allow it to cool down.
5. Place it in the refrigerator to chill for a hour.


Serving:

1. Serve it in a glass, add lemon juice and stir well.
2. Garnish with ice cubes and mint leaves.

AAM PANNA (Summer Cooler)

AAM PANNA (Summer Cooler)

Ingredients:
Totapuri raw mangoes – 2 big size (pulp – 2 bowls)
Sugar – 1 bowl OR candy sugar powder – 3/4th bowl
Mint paste – 1 tbsp
Black salt – 1 tsp
Cumin powder – 1 tsp
Black pepper powder – 1 tsp
Salt to taste
Water – 1 bowl

Method:
1. Boil the raw mangoes in pressure cooker for 5 whistles.
2. Cool completely.
3. Peel the skin of the boiled raw mangoes.
4. Remove the pulp in a bowl.
5. Add sugar, mint paste, salt, black pepper powder, cumin powder, black salt and mix well.
6. Transfer the mixture to a blender along with the one bowl water and blend it well.
7. Pour the aam panna concentrate into a bottle or box for storage into the refrigerator.

Serving:
1. Add 3 tbsp of the concentrate in a glass and add water as per requirement, stir and mix well whenever you serve.
2. Garnish with mint leaves or lemon wedges.
